These Chocolate Baileys Whoopie Pies are truly one of my favorite desserts. Our secret to keeping this recipe simple is to use boxed cake for the cookies - it saves a lot of time and because of the homemade filling, they truly taste homemade. These have always been a big hit at St. Paddy's day parties but why not have them all year round? This can be the perfect boozy dessert recipe all year long. - 1 box Devil's food cake
- 3/4 cup Water
- 1/2 cup Vegetable oil
- 3 Eggs
- OPTIONAL 1 Box : Chocolate instant pudding and pie filling mix (4-serving box)
- 3/4 cup Butter, unsalted, room temperature
- 4 1/2 cups Confectioners sugar, sifted
- 6 tbsp Baileys Irish Cream Liqueur
- Cookie sheet
- Parchment paper
- Medium/large mixing bowl
- Stand or electric hand mixer
- (2) Resealable plastic storage bag (Ziploc) or piping bag(s)

Preheat oven to 350 and line cookie sheet with parchment paper. If you don't have any you could use a silicone baking liner or lightly spray the pan with nonstick spray.

In large bowl, beat together all cookie ingredients.

Pour mixed cake ingredients into a plastic storage bag (such as Ziploc) and cut small hole off one of the bottom corners. Pipe it onto parchment paper into small circles - about 2 inches. Leave about 1 inch between cookies to allow for spreading.

Bake 10-12 minutes and cool completely before filling.

Cream together butter, Baileys, and powdered sugar. You can use a stand mixer with paddle attachment or an electric hand mixer.

Spoon frosting into a plastic storage bag (such as Ziplock) and cut small hole off one of the bottom corners for piping.

Pipe Bailey's buttercream frosting generously on flat side of the cookies. Top with another cake to finish your delicious little sandwich. These can be stored in an airtight container at room temperature for up to 3 days.

If you want to make a Kid Friendly version, replace the Bailey's with Milk. You can also split the filling in half and add milk to one and Bailey's to the other so everyone wins!
