- 1/2 cup Butter, unsalted, softened (1/2 cup = 1 stick)
- 1 1/4 cup Brown Sugar
- 1 tbsp Cinnamon
- 2 Eggs
- 1 tbsp Vanilla
- 1/2 tsp Salt
- 1 1/2 tsp Baking Powder
- 1 1/2 cups Flour
- 1/2 cup Milk
- 1 Apple, peeled and diced (Granny Smith, Honey Crisp or whatever apple you have available)
- 2 tbsp Granulated Sugar
- 1 tsp Cinnamon
- 1/4 cup Walnuts, chopped (optional)
- Large Size Bowl
- Mixer (Stand or Hand)
- Loaf Pan

Preheat oven to 350°. Spray loaf pan with non-stick spray. (Optional: Line bottoms and up the sides with parchment paper (for easy removal) and spray again). Set aside.

Beat butter, sugar and cinnamon for 2 minutes on medium speed or for 3-5 minutes by hand.

Add in eggs and vanilla and continue mixing until smooth, scraping sides as necessary.

Turn mixer to low and add in salt and baking powder, and then flour and milk. Mix until just combined.

Add in peeled and diced apple--stir until combined and pour into prepared pan.

Mix together the sugar, cinnamon and walnuts for topping and gently press topping mix into batter.

Bake for 50-55 minutes until toothpick inserted into the center comes out clean.

Allow to cool in pan for 10 minutes and then remove transfer to a wire rack to cool completely. Serve warm or at room temperature.
