Ingredients
  • 1 box Blueberry Muffin Mix
  • 3/4 Water or Milk
  • 1/4 cup Vegetable Oil or Melted Butter
  • 2 Eggs
  • 1 pint Fresh Blueberries
  • 1 Lemon (2 tsbp lemon juice, 1 tbsp lemon zest)
Brown Sugar Crumble
  • 1 cup Flour
  • 2/3 cup Brown Sugar
  • 1 tsp Cinnamon
  • 1 stick Butter, melted
Cooking Things:
  • Mixing Bowl
  • Bundt Pan
Instructions
  1. Preheat oven to 425 or 400 for dark pans. Spray bundt pan with non-stick spray and set aside.

  2. Make muffin recipe, as indicated on box mix. Mix ingredients until combined.

  3. Gently fold in fresh blueberries, lemon juice and lemon zest.

  4. Spread the batter into the prepared pan.

  5. To make crumble, combine flour, brown sugar, cinnamon and melted butter, mix together with a fork until crumble forms.

  6. Top batter with crumb topping and bake for 40 minutes until a toothpick inserted in the center comes out clean.

  7. Allow the cake to cool for 20 minutes in the pan. Loosen the edges of the cake from the pan with a butter knife and then remove the sides of the pan.
