This brilliantly easy and tasty recipe means there's no excuse to miss breakfast ever again! We love that this Breakfast Burrito recipe is feasible to make for one person or a crowd of 10.  Sometimes hearing the term "meal prep" can seem overwhelming but this recipe gives us a reason to LOVE the term meal prep. You can refrigerate the burritos so you have them all week long or you can freeze them so they are readily available in the future.  Whether you eat them from the fridge or freezer, it takes less than 5 minutes to warm up.

Ingredients
  • 12 Eggs, scrambled
  • 1 lb Bacon, cooked
  • 1 lb Ground Sausage , cooked (Jimmy Dean regular pork sausage roll)
  • 4 oz Shredded Cheddar Cheese (or other cheese of your choice) (about a 1/2 bag)
  • Whatever additional goodies you want to add. Suggestions in notes below.
  • 1 pkg Tortillas
Cooking Things:
  • Large Skillet
  • Baking Pan
  • Tin Foil
  • Gallon Sized Freezer Bags
Instructions
  1. Cook your choice of meats and scramble eggs. (Cooking tips and details in notes)

  2. While your meats and eggs are cooking, lay each tortilla on tin foil so they are ready to be filled.

  3. Top tortillas with sausage, bacon, eggs, cheese and veggies of choice.

  4. Fold burrito and wrap in tin foil.

  5. Place into gallon bags and refrigerate or freeze.

  6. Cooking options: Add burrito wrapped in foil onto pan and cook about 2 minutes on each side. This is the easiest method with NO clean up. You can also microwave refrigerated burrito for 1-2 minutes or 3-4 minutes if cooking from frozen.

We cook bacon on a baking pan at 400 degrees for 20 minutes.

Time saver alert! We cook sausage in a large skillet and use the same skillet to scramble the eggs to eliminate extra clean up. Plus it gives the eggs more flavor - YUM
