Brûlée Sugar Cookies
Ingredients
Cookies
  • 3/4 cup Butter, softened (1.5 sticks)
  • 1/2 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Egg
  • 1 tbsp Vanilla Extract
  • 2 cups Flour
  • 2 tsp Cornstarch
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
Frosting
  • 4 oz Cream Cheese, softened (1/2 block)
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1/4 cup Granulated Sugar
Cooking Things
  • Mixing bowl
  • Parchment Paper
  • Baking Pan
Instructions
  1. Preheat oven to 350° and line two cookie sheets with parchment paper. 

  2. Cream butter and sugars for 3 minutes. Mix in egg and vanilla. 

  3. In another bowl, whisk together flour, cornstarch, baking soda, and salt. Add mixture to wet ingredients and mix until smooth.

  4. Using a small cookie scoop, place balls of dough onto cookie sheets and press down to flatten slightly. Bake until edges just start to brown, 9 to 10 minutes.

  5. Remove from oven and let cool for 5 minutes.

  6. Turn oven to BROIL and make frosting: Beat cream cheese until smooth. Add powdered sugar and vanilla and mix until smooth.

  7. Spread about a TSP of frosting onto tops of each cookie, then sprinkle with sugar. 

  8. Place cookies back in oven and watch the closely-- roughly 1 minute-as sugar caramelizes on top.

  9. Set aside to cool and enjoy!
