Buddha Bowl
Ingredients
  • 1 lb Ground Turkey
  • 1 can Chickpeas, drained
  • 1/2 Red Onion, sliced
  • 1 Sweet Potato, diced
  • 1 bundle Broccoli Crowns
  • 1 Yellow Squash, sliced
  • Kale (2 large handfuls)
  • 1/2 pint Grape Tomatoes
  • Olive Oil
  • Salt + Pepper
  • 1/2 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tbsp Cumin
Tahini Sauce Dressing
  • 1/4 cup Tahini
  • 2 tbsp Maple Syrup
  • 1 tbsp Lemon juice
  • 2-4 tbsp Hot Water
Cooking Things:
  • Cutting board
  • Baking sheet
  • Large skillet
  • Mixing bowl
Instructions
  1. Preheat oven to 400 degrees F and arrange Onion, Sweet Potato, Broccoli & Squash on a baking sheet. Drizzle with Olive Oil, Salt & Pepper. Bake for 15 minutes. 



  2. While vegetables are roasting, heat a large skillet over medium heat, Brown Ground Turkey, then add Chickpeas and toss with Salt, Pepper, Chili Powder, Garlic Powder, and Cumin. Continue to cook for 5 minutes. 

  3. Remove Vegetables from oven and add Kale on top. Drizzle kale with Olive Oil and Salt & Pepper. Bake for another 5 minutes.

  4. MAKE DRESSING: Add Tahini, Maple Syrup and Lemon Juice  & Hot Water to a mixing bowl and whisking to combine. Set aside.

  5. Slice Grape Tomatoes. 

  6. To serve: All everything together into bowl and top with Grape Tomatoes & Tahini Sauce.
