These chicken taquitos are a perfect solution for nights you are short on time. Not only do they make a great, quick dinner but they are also a perfect snack/appetizer recipe OR a perfect meal to freeze ahead of time. Yep- that's right, these chicken taquitos are another one of our freezer meal options and a healthier alternative to the boxed store bought ones. - 8-10 Flour or Corn Tortillas
- 1 cup Chicken, shredded
- 2 oz Cream Cheese, room temperature
- 1/2 cup Shredded Pepper Jack Cheese (monterey jack or other types of cheese will work as well)
- 1 tsp Minced Garlic
- 1/4 cup Green Chilies
- 1/4 tsp Cumin
- Salt and Pepper, to taste

Preheat oven to 400 degrees and line a baking sheet with parchment paper or aluminum foil sprayed with non stick spray

Mix together chicken, cream cheese, pepper jack cheese, garlic, green chilies and cumin, salt and pepper until combined.

Spoon about 2 tablespoons of mixture onto each tortilla. Roll the tortillas tightly and place seam side down on the baking sheet.

Bake 15-20 minutes. For extra crisp, you can broil for the last 2 minutes.

Mix together chicken, cream cheese, pepper jack cheese, garlic, green chilies and cumin, salt and pepper until combined.

Spoon about 2 tablespoons of mixture onto each tortilla. Roll the tortillas tightly and place seam side down in your meal prep freezer container or resealable plastic bag.

Place taquitos in a single layer in a large zip-lock bag (or two) and freeze. To reheat, you can microwave for about 2-4 minutes or bake at 450 degrees for about 10 minutes, checking regularly to make sure they do not burn.
