This easy Cilantro Lime Shrimp bowl recipe is a really satisfying meal for lunch or dinner and ready to serve in 30 minutes. The fresh lime and cilantro are the perfect pair and really bring out all the flavors in this dish. What we love most is all the alternative versions of this recipe.  Here are a few options for your dietary needs:

  • If you are carb conscious or Keto you can remove the rice and serve shrimp over spinach or salad
  • If you are gluten free, you can replace the rice listed with plain brown rice or cauliflower rice
  • If you aren't a rice fan, make these into tacos - and top with Brianna's Homestyle Cilantro Lime Dressing (YUM)
  • If you love it as is and want more spice, add red pepper flakes!
  • If you are a sauce fan, you can top Avocado Ranch Dressing or the leftover oil marinade from cooking the shrimp
  • You can replace shrimp with a another protein or veggies for a vegetarian/vegan option.

Ingredients
  • 1 tsp Olive oil
  • 1 lb Shrimp (This recipe is using frozen, cooked shrimp but any type can be used)
  • Salt + Pepper, to taste (We use about 1 tsp salt, 1/2 tsp pepper)
  • 1 tsp Cumin
  • 2-3 tsp Garlic, minced
  • 1 tbsp Fresh Cilantro
  • 1 tbsp Lime juice
  • 1 box Zatarain's Cilanto Lime Rice (Or any preferred rice, brown, white, etc.)
  • Toppings of your choice! We love fresh spinach, cilantro, avocado, lime.
Cooking Things:
  • Pot to cook rice
  • Medium skillet
Instructions
  1. Cook rice per instructions on the package. We used Zatarain's Cilantro Lime Rice which takes about 30 minutes.

  2. Start to defrost shrimp by running under cold water in a collander for 5-7 minutes. If you are using fresh shrimp skip this step.

  3. Once shrimp is defrosted, season with salt, pepper and cumin

  4. Heat olive oil in skillet and add shirmp. Cook 2-3 minutes and then add garlic, cilantro and lime juice. Cook an additional 2-3 minutes and remove from heat.

  5. Add shrimp to rice and top with your favorite things (avocado, lime, fresh cilantro, tomatoes, spinach, black beans, etc.)
