Crockpot Gumbo
Ingredients
  • 1 lb Chicken Breast, boneless, skinless
  • 12 oz Andouille Sausage, cut into small rounds
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced (or 1 tsp)
  • 1 cup Chicken Broth
  • 1 can Diced Tomatoes (14.5 oz can)
  • 1 jar Marinara Sauce (24 oz jar)
  • 2 tsp Creole Seasoning (we use Tony's)
  • 1 tbsp Brown Sugar
  • 1/4 tsp Cayenne Pepper
  • 2 Bell Peppers, chopped
  • 2 Stalks Celery, chopped
  • Optional Garnish: Green Onions
  • Optional: Serve with Rice
Cooking Things:
  • Crock Pot
Instructions
  1. Place all of the ingredients in the crockpot (besides the Bell Peppers and Celery). Cover and cook on low for 6-8 hours or on high for 3 hours.

  2. Shred the chicken directly in the crockpot to your desired texture. Add in Bell Peppers and Celery.

  3. Cover and cook on high for another 30-45 minutes. (This is a great time to make your rice!)

  4. Serve the gumbo over rice and top with green onions.
