Crockpot Gumbo
Ingredients
- 1 lb Chicken Breast, boneless, skinless
- 12 oz Andouille Sausage, cut into small rounds
- 1 cup Onion, chopped
- 2 cloves Garlic, minced (or 1 tsp)
- 1 cup Chicken Broth
- 1 can Diced Tomatoes (14.5 oz can)
- 1 jar Marinara Sauce (24 oz jar)
- 2 tsp Creole Seasoning (we use Tony's)
- 1 tbsp Brown Sugar
- 1/4 tsp Cayenne Pepper
- 2 Bell Peppers, chopped
- 2 Stalks Celery, chopped
- Optional Garnish: Green Onions
- Optional: Serve with Rice
Cooking Things:
- Crock Pot
Instructions

Place all of the ingredients in the crockpot (besides the Bell Peppers and Celery). Cover and cook on low for 6-8 hours or on high for 3 hours.

Shred the chicken directly in the crockpot to your desired texture. Add in Bell Peppers and Celery.

Cover and cook on high for another 30-45 minutes. (This is a great time to make your rice!)

Serve the gumbo over rice and top with green onions.
