- 1 lb Bacon, diced
- 1 small Onion, diced

Frozen, shredded hash brown potatoes, thawed
- 10 Eggs, beaten
- 2+ cups Shredded Cheddar Cheese (+ a little extra for topping)
- 1 cup Cottage Cheese
- Salt + Pepper, to taste
- 9x13 Baking Dish
- Mixing Bowl
- Medium Skillet

Preheat oven to 350. Lightly grease baking dish with cooking spray.

Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes.

While the bacon is cooking, mix your eggs with cottage cheese and add salt and pepper.

Line the bottom of the greased pan with potatoes, add a layer of shredded cheese then bacon then egg mixture.

Bake in preheated oven until eggs are set, about 30 minutes. Add cheese to top and put back in the oven for 5 minutes until it is melted. Let stand 10 minutes before cutting and serving.
