- 1 lb Ground Beef
- 1 Onion (small)
- 1 packet Taco Seasoning
- 1/2 cup Black Beans
- 1/2 cup Corn
- 2 cups Rice (we used white rice, you can use brown or other flavor of your choice)
- 1.5 cups Shredded Cheddar Cheese (or other cheese of your choice)
- 6 large Tortillas (10 inch)
- Medium Skillet
- Large Mixing Bowl
- 9x13 Baking Dish
- Aluminum Foil
- If freezing, you will also need gallon sized freezer bag(s)

Preheat oven to 350 and spray 9x13 baking dish with non stick cooking spray.

In a medium skillet, on medium heat, cook beef and onions for 5 minutes. Once it is almost browned, add taco seasoning and cook until completely cooked through.

In large mixing bowl combine remaining ingredients (black beans, corn, rice, and cheese).

Prepare burritos one at a time by adding rice mixture and beef/onion mixture to each one.

Fold in opposite sides of each tortilla, then roll up, like a burrito! Place seam-sides down in prepared dish.

Cover with foil and bake for 20-25 minutes.

Wrap each individual burrito in aluminum foil and add to gallon sized freezer bag.

When you are ready to cook, remove burrito(s) from freezer and place foil-wrapped burrito on a baking sheet and bake at 350 degrees for 45-50 minutes.
