Easy Fried Rice
Ingredients
  • White Rice (we used Minute rice and made 4 servings)
  • 2 Eggs
  • 4 tbsp Butter, (separated)
  • 1 package Frozen Peas and Carrots
  • 1 Small Onion, diced
  • 1 tbsp Minced Garlic
  • S+P, to taste
  • 3 tbsp Soy Sauce
  • 2 tsp Sesame Oil (optional)
  • 3 Green Onions (optional)
Instructions
  1. Cook rice and let cool completely in the fridge for several hours or overnight.

  2. In a large skillet, scramble 2 eggs and set aside.

  3. In the same skillet, melt 2 tbsp butter and add frozen peas and carrots. Cook about 3 minutes.

  4. Add diced onion, garlic, salt and pepper. Cook 2 minutes.

  5. Add in cooked rice and 2 tbsp butter. Mix until combined.

  6. Add 3 tbsp soy sauce and sesame oil (optional). Mix.

  7. Add in the scrambled egg and other garnishes, such as chopped green onion.
