Easy + Healthy Shrimp Scampi with Zoodles
Ingredients
- 2 Fresh Zucchinis or Frozen Zoodles if you don't have a spiralizer (this can also be served over pasta; we would recommend angel hair for this dish)
- 4 tbsp Butter
- 4 tbsp Olive Oil
- 1-2 tbsp Minced Garlic
- 1/4 cup Dry White Wine or Chicken Broth (water or other flavor broths will also work)
- 2 tbsp Lemon Juice
- Salt and Pepper, to taste
- Basil, Parsley, Red Pepper Flakes, to taste (fresh herbs are best, if available)
- 1-2 lbs Shrimp (fresh or frozen and thawed)
Instructions

Prepare your zoodles; if you are using fresh, use a spiralizer to prepare. If you are using frozen, prepare according to package instructions.

In a large skillet, melt butter and olive oil. Add garlic and sauté about 1 minute.

Add broth or wine, lemon juice and salt + pepper and cook about 3 minutes.

Add shrimp and sauté until they just turn pink, 2-4 minutes, depending upon their size. Toss with zoodles (or pasta) and cook until coated with sauce.

Add basil, parsley and red pepper flakes, if desired. For good measure we like to top with an extra splash of salt, pepper and lemon juice.

Serve over zoodles or pasta!
