Thanks to our friends at CrockPot for sending this great Exress CrockPot so we could cook up one of our fav new Quick Recipes! With all the flavors of a slow cooker in a fraction of the time, this appliance is a game changer! We made a seriously good, perfectly tender and flavorful pulled pork in about an hour. While it was cooking we had time to whip up a Simply Homemade Apple Coleslaw to pair it with.
- 2 lbs Pork Loin
- 1 tbsp Olive Oil
- Salt + Pepper
- 1 tbsp Garlic Powder
- 1 Onion, diced
- 6 oz Root Beer
- 2 cups BBQ Sauce (1 cup reserved)
- Crock Pot Express Pot (instant pot, pressure cooker)

Select the brown/saute button to preheat the pressure cooking pot and add oil. While the pot is heating up, heavily salt and pepper the pork.

When the pot is hot, add pork and brown pork on both sides, about 3-5 minutes per side.

Add diced onion, garlic powder, 1 cup BBQ sauce, 6oz root beer to the cooking pot. Close and lock lid in place. Turn steam release valve to off.

Select the Meat/Stew setting (or high pressure cook depending on the brand appliance you have the setting may be different) and set the cook time for 60 minutes.

When the cook time ends, turn off the pressure cooker and turn the steam release valve on to allow the steam to release naturally. Shred the meat with 2 forks

Serve on toasted rolls (or butter lettuce for a low carb option)

If you find there is too much liquid, you can strain the pork and add more bbq sauce, as needed.
