This easy greek side salad recipe is light, refreshing and full of healthy ingredients. With some simple chopping and then mixing together a delicious greek dressing to top, you can make this easy side dish recipe in 5 minutes. We were inspired to create this recipe when we realized how many times we have bought the deli-style version of this greek salad and we wanted something we could make on our own, save money and taste just as delicious.
Simply Dellicious Options:
We love this vegetarian version but if you want a higher protein version, add some grilled chicken.
Vegan version: Remove cheese and replace honey with vegan approved sweetener.
- 1 Cucumber, Chopped
- 1 Green Bell Pepper, Diced
- 1 Red Bell Pepper, Diced
- 1/2 Red Onion, Diced
- 1 pint Grape Tomatoes, Quartered
- 8 Crumbled Feta Cheese
- 1/3 cup Olive Oil
- 2 tbsp Red Wine Vinegar
- 1 tbsp Lemon Juice
- 1 tsp Minced Garlic
- 1 tsp Honey
- 1 tsp Oregano
- Salt + Pepper, to taste

Dice cucumbers, tomatoes, onions and peppers. Add to a bowl and mix.

To make dressing: combine olive oil, red wine vinegar, salt, pepper. Add honey, garlic and lemon juice and oregano and whisk until combined.

Add dressing to veggie mix and top with feta cheese. Gently stir to combine.
