- 8 Eggs
- 1 tbsp Olive Oil
- 1 Onion, small, diced
- 1 Bell Pepper (we used red; any color will work!), diced
- 1 box Frozen Spinach (10oz)
- 8 oz Mushrooms, chopped
- 1-2 cups Broccoli, chopped
- 2 tbsp Unsweetened Almond Milk or other Non-Dairy Milk Alternative
- 2 tbsp *optional: Nutritional Yeast (this is a vegan substitute that mimics the flavor of cheese)
- Medium/Large Skillet
- 9" Baking Dish
- Medium Mixing bowl

Preheat oven to 350 and coat baking dish with non-stick cooking spray.

In a skillet heat oil over medium heat and add veggies (onion, pepper, spinach, mushrooms, broccoli). Saute over medium heat for 5 minutes or until onion is translucent and veggies are well combined.

While the veggies are cooking, whisk eggs in mixing bowl and add non-dairy milk.

When veggies are done, add to egg mixture, add salt, pepper and (optional) nutritional yeast.

Pour entire mixture into prepared baking dish and cook 35 minutes or until eggs are completely set.
For non-vegetarians, you can easily add ground sausage, bacon or other meat into the skillet to saute with the vegetables. You can also add shredded cheese to the egg mixture, if desired.
For vegetarians, you can easily add other non-meat substitutes to make this a more hearty dish.
