Tis the season for all of our favorite EASY Thanksgiving Recipes. These easy make ahead mashed potatoes are a staple for both Jenny and Tracy every Thanksgiving. Our favorite thing about this recipe is (of course) how easy it is. With all of the meal planning, perfect timing and entertaining guests, we LOVE that this can be made the night before, letting all the flavors soak in and combine together overnight.  Then on Thanksgiving, all you have to do is pop in the oven for a quick reheat. There's always the option to serve immediately as well.

Do-Ahead Mashed Potatoes

Ingredients
  • 5 lbs Potatoes
  • 2 tbsp Butter
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 cup Sour Cream
  • 1 pkg Cream Cheese (8oz)
  • 1 tsp Onion or Garlic Salt
  • Paprika, sprinkled on top
Cooking Things:
  • Saucepan
  • 9x13" Baking Dish
  • Non Stick Spray
Instructions
  1. Peel, boil then mash potatoes.

  2. Combine mashed potatoes with butter, salt, pepper, sour cream, cream cheese and onion salt.

  3. If refrigerating overnight, place in 9x13 baking dish and cover. Refrigerate.

  4. To serve, bake at 350 for 15 minutes covered and 15 minutes uncovered.
