Mexican Stuffed Peppers
Ingredients
  • 4 Bell Peppers (any color)
  • 1 lb Ground Beef, Turkey, Chicken or other Meat Substitute
  • 1 Medium Onion, chopped
  • 1 Taco Seasoning Packet (or 2-3 tbsp homemade taco seasoning) check notes for homemade taco seasoning recipe
  • 1 can Rotel
  • 1 can Corn, drained
  • 1 cup Shredded Cheese (Cheddar, Mexican, whatever is your preference)
  • Optional Toppings: Avocado, Cilantro, Salsa, Sour Cream or Greek Yogurt, Lime Juice)
Cooking Things:
  • 9x13 Baking Dish
  • Large Skillet
Instructions
  1. Preheat your oven to 375 degrees. Slice the bell peppers in half from top to bottom. Remove the seeds and stem, then arrange cut side up in the lightly greased baking dish.

  2. Over medium high heat, brown your ground beef (or protein of choice) for 5 mins and add seasoning mix &  diced onions. Cook additional 3 minutes.

  3. Drain off any excess liquid,  then pour in the can of Rotel (with juices) and can of drained Corn. Let simmer for 1 minute.

  4. Remove the pan from the heat. Stir 1/2 cup of the shredded cheese. Add the filling inside of the peppers, then top with the remaining cheese.

  5. Pour just enough water to barely cover the bottom of the pan of peppers. Bake uncovered for 25 mins.

  6. Top with your favorite fixings.
