Red velvet cookies, made from a boxed cake mix. Yep, it's true, it is our new favorite thing and I don't know if we can ever make cookies from scratch again. Ok, yes we can and we will but seriously this Simply Homemade red velvet cookie recipe is the best and easiest one around. They are soft and chewy yet crisp on the edges.
We would seriously eat these any day of the week but especially would love them for Christmas and Valentine's day - the bright red cookie and white chocolate chip contrast is colorfully delicious and with only FOUR ingredients how could you turn it down?
- 1 Red Velvet Cake Mix Box
- 1/2 cup Vegetable Oil
- 2 Eggs
- 1 cup White Chocolate Chips
- Mixing Bowl
- Baking Sheet
- Parchment Paper

Preheat oven to 350°F

Mix vegetable oil and eggs with cake mix. Add white chocolate chips and gently stir until combined.

Using a cookie scoop or your hand form golf ball-sized balls of cookie dough and transfer to a parchment paper-lined baking sheet.

Bake at 350°F for 10-12 minutes
