It doesn't get much easier than this. Easy recipe and even easier clean up (our favorite combo!). This recipe is an easy go-to meal to keep on your weekly menu because it is easy to pull together on a whim and it's also one of our favorite recipes because you can meal prep ahead of time.  Chop everything up the night before or the morning you plan to cook and bam, the night comes and all you have to do is throw it on one pan. Another added bonus of this recipe is how easy it is to change a few things to satisfy all appetites. Replace chicken with extra veggies for a vegetarian option or replace tortillas with a salad for a healthy low-carb gluten free fajita. BOOM - you're welcome. 

Sheet Pan Chicken Fajitas

Ingredients
  • 1 lb Chicken (breast or tenderloins), sliced
  • 2-3 Bell Peppers (pick your favorite colors. we used red and green for this recipe), sliced
  • 1 medium Onion, sliced
  • 1 tbsp Fajita seasoning
  • 3 tbsp Olive oil
  • Optional Add-Ons: Tortillas, shredded cheese, sour cream, salsa
Cooking Things:
  • Baking Sheet
  • Aluminum Foil
Instructions
  1. Preheat oven to 350 and line baking pan with aluminum foil.

  2. Add chicken, peppers and onion (all sliced) to baking sheet and drizzle with olive oil and seasoning. (If you do not have fajita seasoning already made, here are the ingredients in the premade seasoning so can create your own - salt, pepper, cumin, garlic powder, paprika, chili powder))

  3. Toss all the ingredients together so they are evenly coated.

  4. Bake in preheated oven for 25 minutes

  5. Serve in a tortilla with your favorite toppings! For a carb friendly option, add mixture to a salad.
