What scared the strawberry? The BOOberry......Get it?? #AwkwardSilence.......... with all of our great jokes aside, this amazing Blueberry Pie 🥧 is prepped in less than 10 minutes and less than 10 ingredients. It’s SO good we made 2 this week and they were completely demolished (by people other than us 😆). Our friends agree this is a keeper! It’s also blueberry based so it’s healthy too, right?!? We’ll go with that

Simply the Best Blueberry Pie

Ingredients
  • 3/4 cup Sugar
  • 3 tbsp Corn Starch
  • 1/2 cup Flour
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 4 cups Fresh Blueberries
  • 1 tbsp Lemon Juice
  • 2 Pie Crusts (Store bought boxes usually come with 2 in a pack)
Cooking Things:
  • 9" Pie Dish (we recommend glass)
Instructions
  1. Preheat oven to 375 degrees

  2. Mix sugar, cornstarch, flour, salt and cinnamon and sprinkle over blueberries. Sprinkle with lemon juice.

  3. Line pie pan with pie crust and pour blueberry mixture into the crust. Top with other pie crust in your desired way (a few options in the notes)

  4. (Optional) Brush top of pie crust with water, egg or melted butter and sugar

  5. Bake for 50-60 minutes or until crust is golden brown and inside of pie is bubbling.

Recipe Notes

If you are feeling fancy you can do a lattice pie crust top. 

You can also simply place the entire pie crust over the pie, crimp the edges and cut a few holes to let the pie breathe when baking. 

As we did with our pie, you can use cookie cutters to make fun cut outs on top of the pie.
