A perfect slow cooker meal that you can make now OR we included an additional section so you can make it ahead and freeze for the future. The hearty, warm and filling combination of meat and vegetables is a perfect comfort food recipe for winter.
- 2 lbs Beef Chuck, cut into bite sized pieces
- 2 tsp Salt
- 1 tbsp Sugar
- 2 tbsp Corn Starch
- 4-6 cups Beef Stock
- 2 Can(s) Tomato Juice (5.5 oz can)
- 1 McCormick Beef Stew Packet
- 1 small Onion, sliced thin or diced (whatever you prefer)
- 6 stalks Celery, diced
- 6 large Carrots, diced
- 1/2 cup Barley
- *Optional: 3 Potatoes, diced

Add all the ingredients to the slow cooker and cook for 4 hours on high or 6-8 hours on low.

In a small bag add the beef, potatoes, salt, sugar, corn starch, 1 can tomato juice and the beef stew packet.

In a gallon sized freezer bag, add the onion, celery, carrots and barley.

From frozen, add 2 cups of beef stock, 1 can of tomato juice and bag of beef mixture into slow cooker. Cook on high for 3 hours.

After cooking for 3 hours, add bag of frozen vegetables for remaining 2-3 hours.
