This easy orzo recipe is a perfect summer side dish. We love how easy the recipe is for this orzo because we chose to use a store-bought dressing to top. Feel free to top with a homemade dressing or store-bought, either way, this is definitely a crowd pleaser and only takes minutes to make!
- 1.5 cups Uncooked Orzo
- 4 cups Chicken Broth
- 1 can Chick Peas (Garbanzo Beans), Drained (one can, 15oz)
- 1.5 cups Cherry Tomatoes
- 1/2 cup Fresh Basil
- 1/4 cup Fresh Mint
- 1 cup Mozzarella Pearls (can use Feta or other cheese, if desired)
- 1 Lemon
- 3/4 cup Braggs Organic Vinaigrette Salad Dressing
- Salt + Pepper, to taste
- Large Pot
- Mixing Bowl

Pour the broth into a heavy large saucepan. Bring the broth to a boil and stir in the orzo. Cook until the orzo is tender, about 7-9 minutes.

While the orzo is cooking, chop the fresh ingredients. Half the tomatoes and chop the basil and mint leaves.

When the orzo is done cooking, drain and transfer to a large bowl. Toss until it cools slightly. Set aside to cool completely (can refrigerate to speed up the process).

Toss the orzo with the beans, tomatoes, basil, mint and cheese. Add vinaigrette and the juice of one lemon and season with salt and pepper.
Easy Orzo Recipe Tips:
You can use any store bought vinaigrette for this recipe. We recommend 3/4 cup but depending which brand you choose, you may need more or less so start with 1/2 cup and add to meet your desired taste.
