Thai Chicken Lettuce Wraps with Peanut Sauce
Ingredients
  • 1 lb Chicken Breast, boneless, skinless
  • 1 tbsp Olive Oil
  • Salt + Pepper, to taste
Peanut Sauce
  • 1 cup Peanut Butter
  • 1/4 cup Apple Cider Vinegar (or Rice Vinegar)
  • 1/3 cup Soy Sauce (or Coconut Aminos (soy free option))
  • 1/4 cup Brown Sugar (or Honey)
  • 2 tsp Fresh Ginger (or 1 tsp ground ginger)
  • 1 tsp Minced Garlic
  • 2 tbsp Lime Juice
  • 2-4 tbsp Milk or water (to your desired consistency)
  • Optional; For a spicy kick, add red pepper flakes or sriracha.
  • Lettuce to create wraps (Boston bib lettuce and romaine hearts are good options)
Cooking Things

Instructions
  1. Add salt and pepper to chicken and cut into bite sized pieces.

  2. Heat oil over medium high heat and add chicken. Lower heat to medium and cook for about 5 minutes, mix around and cook another 3-5 minutes until golden brown and cooked through.

  3. While chicken is cooking, time to make the peanut sauce! Mix together peanut butter, vinegar, soy sauce, sugar, ginger, garlic, lime juice and milk. If you are adding spice to your sauce, add 1 tsp at a time, mix and taste test.

  4. When chicken is done, remove skillet from heat and mix in about 1/3 cup of the peanut sauce until chicken is well coated.

  5. Add chicken mixture to lettuce wrap and top add your favorite toppings (red pepper flakes, chopped peanuts, extra sauce, etc.)
