This delicious Sweet Potato Casserole recipe uses canned Sweet Potatoes instead of fresh which will saves a lot of time but definitely doesn't skimp on flavor. The mashed sweet potatoes are mixed with sugar, butter, milk and eggs and topped with a buttery pecan streusel topping.
This classic Thanksgiving side dish is very easy to make and can be served as a side dish or dessert. These sweet potatoes are rich and creamy and there are so many healthy benefits of sweet potatoes so how can you go wrong? Sweet potatoes are a rich source of fiber and contain lots of vitamins and minerals including iron, calcium, selenium, B vitamins and vitamin C and the antioxidant beta-carotene.

- 2 cans Sweet Potatoes (30oz cans)
- 4 tbsp Butter
- 1/4 cup Brown Sugar
- 2 Eggs
- 1/2 cup Milk
- 1/2 tsp Salt
- 1/2 cup Flour
- 4 tbsp Butter
- 1 cup Brown Sugar
- 1 cup Pecans, Chopped
- Mixing Bowl
- Potato masher or fork
- 9x13" baking dish
- Non stick cooking spray

Preheat oven to 350 and grease 9x13 baking dish with non stick spray.

Drain sweet potatoes and put potatoes into mixing bowl. Mash well and mix in 4 tbsp melted butter butter, milk, sugar and eggs. Spread sweet potato mixture into the prepared baking dish.

In a small bowl, mix together brown sugar and flour. Cut in 4 tbsp butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.

Bake for 25 minutes.
