The Best Vegetarian Quesadillas
Ingredients
- 4 tbsp Butter, divided
- 1/2 Onion, diced
- 1 can Black Beans (15 oz can), drained and rinsed
- 1 can Whole Corn Kernels (15 oz can), drained and rinsed
- 1 can Rotel (10 oz can)
- 1 tbsp Brown Sugar
- 1/2 tsp Sriracha or red pepper flakes
- 8 Tortillas
- 1 cup Shredded Cheese
Instructions

Heat 2 tbsp butter in a large skillet over medium heat. Add onion, and cook until softened, about 2 minutes. Stir in beans, corn and rotel. Add sugar and hot seasoning (if desired); cook about 3-5 minutes. Set aside.

Heat 1 tbsp butter in skillet over medium heat. Place a tortilla in the skillet, sprinkle evenly with cheese and top with some of the bean mixture. Place another tortilla on top, cook until golden, about 3 minutes. Flip and cook on the other side. Repeat by melting additional butter in skillet and add cheese and filling for more quesadillas. Slice and serve!

Slice into wedges and serve with sour cream, salsa and other favorite toppings!
