Twice Baked Potatoes
Ingredients
- 4 Baking Potatoes, washed
- 2 tbsp Canola (or vegetable) Oil
- 6 tbsp Butter, Salted
- 1/2 cup Whole Milk
- 1/2 cup Sour Cream or Greek Yogurt
- 1/2 cup Cheddar or Jack Cheese, shredded
- 1/3 cup Bacon Bits (or chopped up bacon)
- Salt & Pepper

Preheat oven to 400 degrees

Wash Potatoes & place on a baking sheet. Rub them with the canola oil, S&P and bake for 1 hour.

Remove the potatoes from the oven. Lower the heat to 350 degrees F. With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into a mixing bowl (being careful not to tear the shell). Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.

Add butter, milk, sour cream, salt & pepper into the mixing bowl with the potatoes and MIX MIX MIX.

Fill the potato shells with the filling. Top with Cheese and Bacon Bits and pop them in the oven for 15 minutes.
