This Watermelon Caprese recipe is a perfect appetizer to bring to a spring or summer gathering.  It combines fresh, delicious sweet fruit topped with cheese, a hint of salt and a little crunch from the arugula.... perfection! Ingredients
  • 1/2 Seedless Watermelon
  • 1 Cup Arugula
  • 8 oz Mozzarella (we bought presliced for simplicity)
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Glaze
  • Salt + Pepper
Cooking Things:
  • Star-shaped cookie cutter (optional). We used a star but you can use any shape!
Instructions
  1. Using shaped cookie cutter cut pieces of watermelon. If you aren't using a shaped-cookie cutter, cut watermelon in desired shape.

  2. Arrange watermelon on a platter, top with arugula and mozarella.

  3. Drizzle with olive oil and balsamic glaze and top with a pinch salt and pepper.
